Autumn is upon us and with the falling leaves and rainy days also comes the harvest. Abundance of apples, pears, beetroots and pumpkins among others.
Mostly associated with the Halloween celebrations, pumpkins are very versatile vegetables that originate from North America. There are many varieties including traditional round pumpkins, Japanese kabocha or butternut squash. Most have orange flesh with sweet flavour. They can be used in savoury and also sweet dishes. The traditional pumpkin pie is popular for Thanksgiving dinner in America. I used it as my inspiration for this macaron.
The pumpkin spice macaron is filled with a white chocolate ganache flavoured with home made pumpkin puree. I added the traditional spice mix used in a pie, cinnamon, nutmeg, allspice and ginger. It has a sweet and earthy flavour with the hint of spice.
